Matcha Green Tea Cake

This has to be my favourite cake. It is somewhat similar to a gentle victorian sponge, except there is an added husk from the slight bitter green tea. This green tea cake recipe came about from struggling to find the right recipe from blogs or cookery books. I had to adapt this recipe many times from my original sponge cake to create a texture that wasn’t too dense and dry from the matcha powder. The result was sweetness that is just about balanced, portion of layers right - even the matcha naysayers will turn heads.

A perfect light cake to have in the afternoon - to start over the day again, to reflect and do better.

Butter 200g | some more for lining
Organic Cane Sugar  200g
Self-Raising Flour 200g
Baking Powder (aluminium-free) 1 tsp
Eggs whisked 4
Matcha Green Tea Powder 2 tbs
Milk whole 40ml
Vanilla Bean Extract (or general vanilla extract) 1 tsp

Mascarpone Cheese 500g
Vanilla Bean Extract (or general vanilla extract) 1 tsp
Honey 70g
Matcha Green Tea Powder 1 tbs

Pre heat oven to 170C standard or 190C fan. Brush the base and sides 20cm sandwich tins with softened butter and dust with some flour. In a mixer, beat all the cake ingredients together until you have a thick green soft batter.

Split the mixture onto 2 sandwich tins. Divide the mixture between the tins and bake in the oven for 20 mins until cake becomes firm. The top and sides may seem light brown but don't worry all is green on the inside. Allow to cool slightly before transferring onto a cooling rack.


Make frosting by beating (fast speed level) cheese together, vanilla bean extract, honey and matcha powder until smooth, only around 1 minute. Still whisking, slowly add all of sugar and continue beating for another minute. Once cake have cooled completely, use a palette knife or spoon to spread frosting over top of one cake (smooth side up) then top with the other layer (also smooth side up) and spreading frosting on top and side. Finish by dusting matcha green tea powder over top of cake using a sieve.
